Arbi Patte Ki Chakri: Hey there, today while writing this recipe i was wondering that nature has given us such wonderful things. Everything which nature has provided us has its own importance and if we used them in sane way we can get desired results. Like today we have used arbi plant leaves to make this extraordinary snack item . See what i was saying about natural products. It’s a great example of that.

Coming back to the recipe the core ingredient arbi leaves can be sourced easily , maybe it can be home grown or you can get them from any nearby indian stores. I had used my home grown leaves. 

As arbi leaves are high in vitamin c, vitamin a and disease fighting antioxidants. We have used ajwain in this recipe as arbi can be heavy for the stomach for some people. So ajwain is a good agent for digesting the food. Secondly, ajwain gives a very different aroma and taste to our dish.

Basically this recipe I have learned from my mom . My mom is also a garden lover . She believes too much in natural products and their healthy properties. She used to make this so much when we were small , still I remember the taste of her arbi ke chakli.

The taste of this dish is a little tangy and a little sweet so you can say khatta meetha(sweet and sour). The most important pert of this dish is to remove the thick pert of veins of arbi leaves. Its really very important to remove it as it can stick in yout teeth or it can be difficult to swallow.

Ingredients for Arbi Patte Ki Chakri

  • 4 pieces arbi leaves
  • 1 cup Besan chickpea flour
  • ¼ cup Yogurt
  • ½ tsp Red chilli powder
  • ⅓ tsp garam masala
  • ⅓ tsp sesame seeds
  • ⅓ tsp sugar
  • 1 tsp lemon juice
  • ¼ tsp grated ginger
  • 2 green chillies finely chopped
  • ⅓ cup of water
  • Salt to taste
  • Pinch of Hing

Instructions

  • 1 In a medium size bowl, take besan , yoghurt, salt, hing, chilli powder, garam masala ginger and green chillies. Mix them with a spoon.
  • 2 We need not very thick, not very liquid batter. So if you feel that the batter is very thick just add ⅓ cup of water , but dont put water in one flow . Just add as much water as needed.
  • 3 Now the most tricky part , take the arbi leaves , wash them . Now with the help of a knife with a very gentle hand remove the thick part of the veins of the leaves .
  • 4 Once you remove the thick part of veins , spread the batter on the whole leaf. Cover this leaf with another leaf . Now make the roll of it like we make wraps.
  • 4 Turn on the stove pu your steamer on it or if you don’t have steamer put vessel filled 1//4 th with water and cover it with strainer which can cover the whale vessel
  • 5 Put the rolls on the strainer and cover it with a cover so that steam dont go out. Steam the rolls for at least 20-25 minutes.
  • 6 Once the rolls get steamed, place them in the plate to cool down. Once your arbi rolls are cool down, cut them in slices ½ inch thick.
  • 7 Take a frying pan and put 1 tbsp oil in it. Let the oil get hot on medium flame. Once the oil get hot add sesame seeds and wait till they crackle. Now add your arbi leaves and saute it. Sprinkle some salt on it, again mix them well with spatula.
  • 8 garnish it with chopped coriander leaves.
