Peach & Cucumber Salad

Hey there, I hope spring is treating you guys well. It’s the most beautiful weather from winter to summer’s transition. In Hong Kong the weather is delightful…sweet yellow peaches are tossed with mozzarella, and basil leaves and drizzled with balsamic vinaigrette to make this peach salad. This adds crunchiness to our beautiful salad.

Surprisingly this peach salad with cheese and cucumber tastes amazing. If peaches add sweetness to the salad then cucumber. It’s a very quick salad with few ingredients. This is one reason it has become my son’s favorite salad as he can also make this salad easily. I tried this salad with a few variations but for me, cucumber goes best in this salad. Peaches are sweet and soft whereas cucumbers are crunchy and blend. So basically it’s a perfect combination.
So let’s start with our salad making.

Ingredients

2 medium size peaches
1 tbsp extra virgin olive oil
½ tsp lemon juice(fresh)
Pinch of salt
1/4th tsp freshly ground black pepper
1 cup fresh basil leaves
2 ounces of mozzarella, sliced
11/2 tsp balsamic vinegar

Method

  • Place the sliced peaches in a medium size bowl, and drizzle with olive oil and lemon juice.
  • On the large platter spread the basil leaves, then layer the peach slices with mozzarella cheese and cucumber. Drizzle the balsamic vinegar.
  • Sprinkle salt and black pepper. Salad is ready to enjoy.
