Spinach and Cottage Cheese Puffs

Start your party with these crispy, flaky, and crunchy spinach cheesy puff cups. So today’s recipe is spinach and cottage cheese puffs cup. It’s perfect finger food for small parties or maybe big parties. You can prepare a big portion of it at one time depending on your oven size. 

When I was small my father used to buy these puffs which contain potatoes and onions mixed, but with time so many variations have been introduced in this recipe. Bit still those childhood memories are very much fresh in my mind. This is the one reason I include cottage cheese (crumbled paneer )in this recipe to add that Indian food element to my recipe. In India use of potatoes and paneer is nonignorable.

I have bought my filo puff pastry sheets from the store. It is very easily available in the stores. Please follow the method of thawing as indicated on the packing. you can use thick sheets also or thin sheets can be used to prepare this recipe. But I’m using the thick sheets as I like the texture of thick sheets more in these puff cups.

As it’s winter season I got a very excellent quality baby spinach so I’m using it. I have used crumbled paneer in this recipe. Few herbs to make these puff cakes super delicious. So let’s start with the recipe.

Spinach and Cottage Cheese Puffs

Ingredients

1 packet filo pastry sheets
1 tbsp melted butter for brushing

For filling

1 small onion, finely chopped
1 cup spinach, finely chopped
½ cup cottage cheese, paneer crumbled
1 tsp garlic, chopped
½ tsp oregano
½ tsp chili flakes
¼ tsp black pepper powder
½ cup processed cheese
½ cup mozzarella cheese
Salt to taste
1 tbsp oil

Method

Heat oil in a pan. Add chopped onions, saute and add garlic. When onions get little soft add spinach to them. Cook the at least for a few minutes. Make sure all the water gets evaporated.

Now add all the spices and salt. Turn off the burner. Lastly add crumbled paneer to the mixture and mix it well.

Once the mixture gets cool down add the processed cheese. Make sure the mixture should be cool down otherwise the mixture will become gooey.

Now take the cupcake tray and brush it with butter. Place the sheets in each cupcake mold so that they cover the whole area. Now poke the sheets with the help of a fork so that they don’t get rise like a ball. Now again brush the sheets from inside and then put an equal amount of mixture in all the cupcake molds. Sprinkle some mozzarella cheese on each piece. Now again brush the slides of cupcakes with butter.

Now keep the cupcake tray in preheated oven at 180 degrees for 20-25 minutes. Once you see that cups are getting golden brown take them out.
