Jam Cookies! Hey there! Happy Saturday, fellow foodie! Thank you for stopping by – we hope your holiday prep is going great! We just finished decorating our Christmas tree & the house (pictures coming soon on Instagram) Christmas recipes are the best – wouldn’t you agree? They are so filled with the holiday spirit and are of course, extremely delicious! Over the next 13 days we will be posting awesome Christmas recipes for you to enjoy ? ! Simple & Sweet Jam Cookies (Perfect for Christmas!)
Ingredients for Jam Cookies
- For cookies:
- 2 cup all-purpose flour
- 1/2 cup maple syrup
- 1/2 cup unsalted softened butter
- 1/2 tsp vanilla essence
- A pinch of salt
- For the spread:
- 1/4 cup strawberry jam
- 1/4 cup apricot jam
- 1/2 cup unsalted cold butter
- 1/4 cup powder sugar
- a drop of edible green color
- For the butter icing:
- Mix cold butter and icing sugar nicely in a smooth paste. Add a drop of green color and mix them. Your butter icing is ready.
Instructions
- *Start preheating your oven at 160 degrees Celsius before you start this recipe
- Whip the butter with an egg beater until it becomes very creamy. Once you get the right texture, add maple syrup, salt & vanilla essence.
- Once all the ingredients blend nicely, add flour & continue mixing. Now, using your hands knead the mixture until it becomes a nice dough.
- Now put your dough in between of two parchment papers as it is & using a rolling pin, roll it out until it becomes flat. The thickness of your dough should be around 1/4 inch so make sure you don’t roll it way to much.
- Now we have our cookie dough ready! Use a cookie cutter to make circle cookies only!
- Okie, now this part is a little complicated too explain but we will try our best! Our goal is to make sandwhich-like cookies, right? So we will set aside half of the cookie shapes & use the other half to make some shapes inside them so the jam will be visible, something like this:
- So set aside half of the circles & make your desired shapes inside the other half.
- Now line your baking tray with parchment paper & carefully transfer your cookies onto it.
- Now put your cookies into the oven for 15 minutes at 160 degrees celcius. Once they bake take em’ out of your oven and let them cool down.
- Now on the plain, circle cookies spread one of the jams listed above in the “spread” section in the ingredients.
- Place your shape-cut cookies on top of the plain, jam ones to make sandwich-like cookies.
- Dust your cookies with some icing sugar & tada! Your cookies are ready to be eaten (and relished, hopefully!)
