Pumpkin Halloween Handvo!! It’s Halloween! Who loves this time of the year? “Scary” costumes, sweet candy, and sweet candy (yes, that was deliberate) We are making handwa today which is a Gujarati dish made with different dal (lentils). It’s healthy, delicious and moreover, it’s easy to make. We have used basmati rice in this recipe, you can use any white rice which should not be sticky. All deals and rice should be soaked at least for 7-8 hours or you can do overnight also. While using spices be generous otherwise the handwa will taste very black. So it should be on a little spicier side. We have used two kinds of batter here, one is with pumpkin and the other one is with lauki (bottle gourd). We just want to try pumpkin as another option for lauki …. and the other reason is as Halloween is near the corner so we just want to give the feel of Halloween but a little bit with a twist. But the results are expectedly awesome. So guys you can try both the options as they equally taste great. And most important you don’t have to change the recipe it’s just you replace lauki with pumpkin or vice versa.

Ingredients for Pumpkin Halloween Handvo

  • For handwa:
  • 1 cup white rice
  • 1/2 cup moong dal
  • 1 tbsp arhar dal pigeon pea lentil
  • 1 tbsp urad dal split and husked black gram
  • 1/2 cup curd
  • 1/2 tbsp baking soda
  • 1 tsp ginger paste
  • 2 tsp green chili paste
  • 2 tsp salt
  • 1 cup grated bottle gourd option for pumpkin
  • For tempering:
  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp fenugreek seeds
  • 1/4 tsp Hing
  • 1/2 tsp salt
  • 1/2 tsp sesame seeds
  • 1/2 tsp raw coriander seeds
  • 1/2 tsp turmeric powder
  • 1 cup grated pumpkin
  • 7-8 curry leaves

Instructions

  • For batter:
  • Soak all dal and rice in water for 7-8 hours. Once the dal and rice get soaked strain all the water. Now grind soaked dal and rice in a blender with 1/2 cup of water. The consistency of the mixture should be like cake batter.
  • Scrap this batter in a medium-size bowl, now add ginger and chili paste in it. Add yogurt and salt to this batter and mix it well with a spatula. Keep this mixture for at least three-four hours for fermentation.
  • Take a pan and pour oil into it. Let it get heated on medium flame, Now add mustard seeds, and let them pop out. Add fenugreek seeds, asafoetida, sesame seed, raw coriander seeds turmeric powder, curry leaves, grated pumpkin, and salt. Saute it nicely.
  • Take the batter and put baking soda in it, mix it with the spoon. Now add the pumpkin mixture to this batter and mix it gently.
  • We take now appam pan and let it get hot on medium flame. Brush the tray with oil so that your upper doesn’t get the stick. Pour around one tbsp of batter in each round mold. Cover it with a lid and let it cook for 5-6 minutes at the medium-low flame. Now again turn the side of appam upside down with the help of a pointed wooden spatula, again cover it with lid for 3-4 minutes.
  • serve it hot!
  • If you want to bake this, preheat the oven to 180 degrees for 10 minutes, grease ur baking dish and pour the batter and place it in the oven. Let it bake for 20 minutes. Your pumpkin handwa is ready.
