Mint Avocado Dip!! Hey guys! I am having a typical Friday at home rustling things up in the kitchen and trying to use ingredients that I already have because I don’t want to go to the supermarket since HK is having its third wave of the virus and the local market isn’t exactly empty. Also, if you have been here for a while you probably know that I only like making recipes with easy to get ingredients that take a short amount of time. This recipe if full of nutritious and wholesome ingredients. Read some of these benefits: Avocado Benefits: Avocados are nutritious They actually have more potassium than bananas! They are loaded with fibers They are great for your vision (so avocados and carrots everyday will keep you away from an eye test! People who eat avocados are less likely to have depression!! Mint Leaves Benefits: You will have better digestion It cures headaches Treats asthma Treats common cold (especially useful right now) It is good for your skin.

Ingredients for Mint Avocado Dip

  • 2 ripe avocados
  • 1 1/2 tbsp. hung curd
  • 7 -8 fresh mint leaves
  • 1 tbsp. lemon juice
  • 1 tsp. salt
  • Ingredients for the garnishing:
  • 1/2 tbsp. finely chopped onion
  • 1/2 tbsp. finely chopped tomatoes seedless
  • 1/2 tbsp. finely chopped bell peppers any colour
  • 1 tsp. jalapenos
  • Mint leaves

Instructions

  • Cut an avocado into 2 halves and grind it along with all the listed dip ingredients (hung curd, mint leaves, lemon juice and salt) for a minute at high speed.
  • Now scrape the dip from the grinder into a serving bowl. Garnish it with the listed garnishing ingredients (bell peppers, tomatoes, jalapenos, onions, and mint leaf) and enjoy!
  • We can use this delightful dip with nachos , tacos , quesadillas and so much more! Enjoy!
