Easy Minty Green Salad!! We noticed that people love our salads and desserts the most so since we did a delicious chocolate mousse recipe yesterday we decided to do a fresh and healthy salad today! A lot of people come up to me and say “What is the point of eating salads? Aren’t they just veggies chopped and mixed together?” No! They definitely aren’t. Salads are fresh and “timeless” recipes and are absolutely mouth watering and toothsome. Today I am going to make one of my favourite salads: Minty Green Salad. This salad’s primary flavours are mint and lime.

Salads are fresh and “timeless” recipes and are absolutely mouth watering and toothsome. Today I am going to make one of my favourite salads: Minty Green Salad. This salad’s primary flavours are mint and lime.

Ingredients for Easy Minty Green Salad

  • 4 cups spinach – I recommend using fresh spinach rather than canned ones for health and taste benefits. Try using this link to buy spinach we don’t use this but we have heard a lot of good reviews, we buy our’s from a standard supermarket
  • 10 – 12 pieces of chopped cherry tomatoes – I use the red ones but if you prefer the yellow ones that’s up to you
  • 3 Gherkins Cucumbers – Gherkins are small and stubby cucumbers. If you can’t find these you CAN use normal sized cucumbers.
  • 1 large sliced pink onion – You can use red onions if you don’t have pink ones.
  • 2 shredded carrots – You can take any color orange or red it doesn’t matter.
  • 1 broccoli floret – You can try this link we don’t use these but have heard some good reviews
  • 7-8 pieces of baby corns – Cut them into thirds for best results.
  • 1 whole avocado sliced – If you don’t have avocados than try using your own choice of vegetables.
  • 1 medium sized butter lettuce- Easily available in the market.
  • Mix all of your veggies together?
  • Salad Dressing Ingredients:
  • 2 tbsp fresh mint
  • 1 tbsp fresh OR dried basil
  • 3 tsp honey
  • 2-3 pieces of minced OR finely chopped garlic
  • 1 1/2 tsp lime juice
  • 1/4 tsp black pepper
  • 1/2 tsp salt can be adjusted according to your taste
  • 1 1/2 tbsp. extra virgin olive oil – Filippo Berio

Instructions

  • Now that your dressing and salad are ready it’s time to pour your dressing on top of your veggies:
