Super Simple Manchow Soup!

Ingredients

  • 1 tbsp. vegetable oil
  • 1 tsp fresh chilies crushed
  • 4 tbsp. garlic chopped
  • 1 tbsp. coriander stems chopped
  • 1.5 liters vegetable stock fresh
  • 1/4 cup finely chopped cabbage
  • 1/4 cup finely chopped french beans
  • 1/4 cup finely chopped carrots
  • 1/4 cup finely chopped bell pepper
  • 1/4 cup finely chopped mushrooms
  • 1/4 cup finely chopped tofu
  • 1 tbsp. light soya sauce
  • 1/2 tbsp. dark soya sauce
  • 1 tsp. vinegar
  • 1 tsp. black pepper
  • 1/2 tsp. sugar
  • 1 tbs water and 1 tbsp cornstarch mixed
  • 1 cup parboiled noodles
  • 1/4 cup corn flour
  • 1 cup oil for frying
  • 1/2 tsp spring onions for garnishing

Instructions

  • Take oil in a medium-size pot add garlic, ginger, chilies, and coriander stem, sauté them for few seconds. Now add strained vegetable stock and cook it for few minutes.
  • Now add all the chopped vegetables to it and cook it for another 2-3 minutes. It's time to add our soya sauce, light, and dark, salt and black pepper. add water and corn flour mix to the soup. Now let it cook for another few minutes. In the end, put sugar and vinegar just let the soup boil for 1-2 minutes.
  • Meanwhile, put oil in the frying pan and keep it on medium flame to get hot. Till the oil get hot, take parboiled noodles, sprinkle corn flour, and mix them with your hands. Make sure that the noodles get coated nicely.
  • Put the noodles in medium hot oil for frying, Fry it gets golden brown.
  • Let's try the delicious man chow soup, sprinkle some spring onions and fried noodles. Enjoy this soup in cold chilly weather!
