Tutti Frutti Cake

Hey guys! Today I’m making a tutti frutti cake which is one of my favorite tea cakes. Easy to make and delicious to eat. It’s the most popular cake in India which is loved by kids and adults. Our tutti frutti cake is moist and pretty with dotted sweet tutti frutti. I grew up eating this cake, maybe from the school canteen or a nearby bakery. It always tastes great. For me it’s not only cake, it’s a ritual for me to eat one slice every day or sometimes more. People who live in India very well know what tutti frutti is but people who don’t know what tutti frutti so it’s made by cooking raw papaya bits in sugar syrup. Then they are colored and allowed to air dry for many days. Anyways you can easily get tutti frutti in India but outside India, you can try Indian stores where people keep it.

Let’s start with the recipe:

Ingredients

190 gm maida(plain flour)

½  cup powdered sugar

½ cup butter ( I use salted)

¾ cup yogurt

50 ml room temp milk

½ tsp baking soda

1 tsp vanilla essence

1 tsp baking powder

½ cup tutti frutti

NOTE: you can use any dried berries in place of tutti frutti

Method

  1. In a small bowl mix tutti frutti with 2 tbsp of flour, mix well, and keep it aside. This will help tutti frutti to keep not getting settled at the bottom.
  2. Now take room temp butter and whisk it well so that it becomes smooth and fluffy. The butter color should get pale. You can use a whisker , or an egg beater.
  3. In the whisked butter add powdered sugar and again with the help of an egg beater whisk it nicely at least for 2-3 minutes. The texture should be soft and smooth
  4.  Add yogurt in mixture and again whisk it well.Now add vanilla essence.
  5. In a separate bowl, sieve maida, and baking powder. Add this mixture to the butter mix. With the help of a spatula mix them with a light hand.
  6. Finally, add tutti frutti to the mixture, and with a spatula mix them well gently. The mix will be a little thick.
  7. Preheat the oven to 165 degrees celsius. 
  8.  Line the 8 inch cake pan with parchment paper. Pour the mix in the baking dish , sprinkle some tutti frutti on the top and put it in the oven for at least 45-50 minutes.
  9. Bake the cake in the middle rack. CHeck the cake with inserting toothpick , if it comes clean it means your cake is ready.
  10. Cool the cake on the rack ,remove it from the baking dish and let it cool completely.
