Watermelon & Mint Salad

Watermelon is by far the finest summer fruit there is. Not only does it keep you cool and hydrated, but it is also probably one of the most scrumptious fruit we have ever tasted. In this salad, we have incorporated an assortment of berries, watermelons (obviously), mint and a couple other easy-to-get ingredients.

PRO TIP: If you are making this for an event or dinner, don’t prep it beforehand as it won’t taste as good ‘old’.

Watermelon & Mint Salad

  • 1 Watermelon – fresh (cut in cubes, medium size)
  • 1 tbsp sugar (white, regular)
  • 1 tbsp lemon zest
  • ½ cup mint (fresh, finely chopped)
  • ½ cup blueberry (fresh)
  • ½ cup cucumber (chopped)
  • 1 tsp lemon juice
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  1. 1 Take a big bowl, add watermelon, blueberry, cucumber, lemon zest, and sugar. Mix them well.
  2. 2 Now pour lemon juice and season the salad. Refrigerate it for ½ hour.
