  • 6 tbsp warm milk
  • 1 tsp yeast
  • 1 tsp granulated sugar
  • 1 cup plain flour
  • 1 tsp butter
  • 1 tsp grated garlic
  • ¾ tsp dry oregano
  • ½ tsp salt
  • 2 tsp olive oil
  • For the filling:
  • 2 tbsp melted butter
  • 6 to 7 peeled and grated garlic
  • 1 tsp dry oregano
  • 1 tsp chili flakes
  • 1 tbsp finely chopped basil leaves
  • 2 tbsp mozzarella cheese
  1. Take a medium-size bowl and add 6 tbsp of warm milk, dry yeast, and sugar in it, mix them well with the help of a spoon, and rest it for 5 minutes to get the yeast activated.
  2. Now add salt, dry oregano, butter, and plain flour to the activated yeast mixture. Combine them well, knead it for at least 8 to 9 minutes with your palm and make a soft dough.
  3. Put olive oil on top of the dough and again knead it for a little while, tuck the dough, cover it with cling and rest it. Rest the dough for two hours.
  4. Meanwhile, prepare your filling. Take a small bowl, add melted butter, grated garlic, dry oregano, chili flakes, and finely chopped basil leaves, mix them well.
  5. Preheat your oven at 180 degrees celsius.
  6. Lined your baking tray with parchment paper.
  7. Your dough must be double the size. Sprinkle some plain flour on the platform, Punch the dough gently with your wrist and transfer it on the platform, knead and tuck your dough and make a round ball. Now with the help of a rolling pin make a round circle of 10 cm diameter of it.
  8. Spread garlic butter filling on the top of flattening bread dough evenly with the help of a brush or spoon.
  9. Keep ½ tbsp filling aside as we have to brush the bread later. Sprinkle mozzarella cheese on half side of flattening the dough, gently lift one side of the dough and fold half, seal the edges nicely with your fingertip.
  10. Now with the knife make longitudinal marks on it, then brush it with garlic butter filling nicely and sprinkle some finely chopped basil leaves on top of it. Transfer it to your baking tray and bake it at 180 degrees celsius for 15 minutes.
  11. Serve hot with cheese sauce and ketchup.

The reason kneading is an important part of bread making is to create structure and strength in the dough, leaving it silky and soft with a little cushiony feel.
