Hey there! We have a HUGE surprise coming up very soon! Actually, we have a few huge surprises coming up very soon!! Unfortunately, we can’t share them right now 🙁 but just a few more weeks 🙂 Recently, we have been doing big twists on traditional Indian dishes since Diwali is coming up so continuing with that theme let’s create a batch of baked rose samosas!!

  • 1 cup plain flour
  • 1 tbsp semolina
  • 3 tsp vegetable oil
  • 21/2 tbsp water to knead a soft dough (can add a little more water if needed)
  • To make the filling:
  • 2 large boiled potatoes
  • 1 finely chopped green chili
  • 1 tsp grated ginger
  • ½ tbsp finely chopped fresh basil (coriander optional)
  • 1 tsp dried rosemary
  • ½ tsp amchoor powder
  • 1 tsp Salt – According to Taste
  • To make the slurry paste:
  • 2 tbsp plain flour
  • 2 tbsp water
  • Please keep 1 tbsp vegetable oil for brushing your “roses”
  1. Take a medium-size bowl and sieve your plain flour. Add semolina, salt, and oil to it.
  2. Gently rub this mixture with your hands and add water slowly.

  3. Knead the flour and make a smooth dough, cover it with a moist cloth, and rest for 20 minutes.
  4. Preparation of potato filling:
  5. Take boiled potatoes in a bowl and mashed them with the manual masher. Take a pan pour oil, let it heated on medium flame.
  6. Add ginger and chili, saute it for few seconds. add mashed potatoes rosemary, salt, chili flakes dry rosemary, and amchoor powder in it.
  7. Mix it well with the help of the potato masher and cook for 3 to 4 minutes.
  8. Sprinkle fresh basil leaves on it. Cool and make 8 to 10 balls from it.
  9. How to make rose flowers:
  10. Now take the dough and knead once again and divide it into 8 equal round balls.
  11. Roll each ball into a small round with the help of a rolling pin.
  12. Now cook the rolled sheet on hot Tawa for only 20 seconds on each side.
  13. Take one round sheet and make 6 small cuts, diagonally opposite to each other.
  14. Place one ball of potato mixture in the center and cover it by lifting one flap and then the opposite flap over it. Sealed the flap with the sticking paste.
  15. Repeat for the other 4 flaps, creating a nice shape looking like a flower.
  16. Keep the center free and open. Brush the flowers with oil nicely. Line the baking tray with parchment paper.
  17. Bake in a preheated oven at 200-degree celsius for 20 minutes.
  18. Your samosas are ready! Serve them with a nice dip!
