They are so easy to make. Seriously, my younger son makes them whenever his sweet tooth craves dessert. This Tea Cake is a simple recipe. In fact, you probably have all of the ingredients in your pantry right now! You just need plain flour, yogurt, cooking oil, sugar, and baking ingredients.
We have used sugar-glazed fruits and whipping cream to decorate and enhance the cake taste. Brushing some warmed glaze over your fruit is like adding a shiny topcoat. It keeps the fruit hydrated and looking its best.

Vanilla cake coated with icing and glazed with fresh fruits
We have used plain flour,yogurt ,oil and baking ingredients to make this fluffy cake.

- ingredients to make cake:
- 2 cup plain flour
- 3/4 th cup cooking oil
- 1 cup caster sugar
- 1 cup curd
- 1/2 tbsp baking soda
- 1/2 tsp baking powder
- 1/2 tbsp vinegar
- 1 tbsp milk
- 1 tsp vanilla essence
- Sugar glaze:
- 1/2 water
- ¼ cup sugar
- 1/4 cup water to dissolve cornstarch
- 1 tbsp cornstarch
- cake toppings:
- whipping cream
- strawberry
- kiwi
- To Make sugar glaze ,First add ½ cup water and ¼ cup sugar in a pan over medium heat,stir until sugar dissolve ,then mix cornstarch with water together and pour this mixture into the hot mixture on the stove,keep stirring it continuously. Allow the mixture to simmer for one two minutes until it has thickened, then remove it from the pan.
- Keep aside to cool at room temperature,then brush it on fruits.
- To Make tea cake.
- First preheat your oven at 180 degree celcius. Lined your baking tray with parchment paper.
- Take a small bowl ,add curd and baking soda mix well and keep aside.Few minutes later you will notice it becomes foamy.
- In another bowl put flour and baking powder and keep aside.
- Now take a big bowl and add oil and sugar to it ,mix with the egg beater at high speed for 2 minutes. Add curd mix ,vinegar to it and mix them well. Add vanilla essence to it.
- Now add all dry ingredients to the liquid mixtures and mix slowly with the help of spatula to make a lump free cake batter.Don’t over mix the batter.
- If the cake batter is too thick ,add little milk to it.
- Scrap the batter into the baking tray with the help of spatula. Bake in a preheated oven at 180 degrees for 10 minutes and at 160 degree celcius for another 30 minutes. Take out your cake after 40 minutes of baking.
- Do the skewer test insert a skewer inside the cake if it clear comes out your cake is ready.
- Keep your cake to cool down.
- Top with whipping cream and sugar glazed fruits.
We mix curd and baking soda together because baking soda being alkaline in nature reacts with acidic curd and this is what helps to make the cake light and fluffy.
Try using caster sugar instead of granulated sugar.As granulated sugar has big chunks and it doesn’t easily melt while baking.
Try using neutral oil,which don’t have any taste.
