What this means is that it’s both, has a ton of beinifts and can basically be made into anything. You can eat it straight out of a jar – or maybe even grill it? Not only that, ut Asaprgus is loaded with vitamans A, B6 & C!

Trouble-Free Cream of Asparagus Soup
Who else loves asparagus!? Even if you don’t – just give this recipe a shot. Asparagus is something we like to call a super veggie ? What this means is that it’s both, has a ton of beinifts and can basically be made into anything. You can eat it straight out of a jar – or maybe even grill it? Not only that, ut Asaprgus is loaded with vitamans A, B6 & C! Our favourite part about this veggie is that it tastes delicious even with the most minimal prep – and we hope you love this recipe 🙂
- 500 gms fresh asparagus (ends trimmed and cut into 1-inch pieces)
- 1 1/2 tbsp unsalted butter or olive oil
- 1 small onion (finely chopped)
- 2 cloves of garlic (finely chopped)
- 2 cups vegetable stock or water
- 1 cup milk
- 1 tbsp plain flour
- 7 to 8 cashews
- 1 tsp black pepper grounded
- salt according to taste
- For granishing:
- Roasted cashews
- Bread crotons
- Fresh cream
- Twigs of fresh basil leaves
- Pre-notes:
- First of all, just be sure that your asparagus should be fresh, don’t buy dry or hard asparagus. If your asparagus is dry or hard it means they are not fresh, if you don’t use fresh asparagus your soup will not taste as great as it should.
- If you are allergic to nuts please avoid them, instead of that, you can use white sauce. Though we are using both the things in our recipe if you want to avoid nuts you have to add white sauce to your soup as it will give the soup a creamy texture.
- In case you don’t want to add white sauce then you have to add nuts to your soup.
- Method
- Put a medium-sized pot on medium-low flame. Add 1/2 tbsp butter and let it melt, while melting butter see that it should not get brown. In this melted butter add chopped garlic and onion to it, cook them for a few minutes. When you see that onions and garlic get a little soft, add Asparagus, and Cashews, keep mixing them with the spoon for 2 minutes.
- Now pour 2 cups of vegetable stock into the sauteed asparagus. Bring your vegetable and asparagus mix to boil and once the boil comes, reduce to simmer for 10 minutes or until the asparagus gets soft.
- Meanwhile, take another pan and add 1tbsp butter to it let it get melt on low flame, add plain flour to the melted butter and stir it for a minute. Now add milk to it and mix it continuously until a boil comes. Basically, we are making white sauce for our soup.
- Add this white sauce to the asparagus soup which we have kept for boiling. Cook it for 3 minutes, stir continuously.
- Once the soup thickened, blend the soup using with an immersion blender, here we want a smooth paste. so blend it nicely. Now again pour the soup into the cooking pan, bring it to boil.
- Pour 1tbsp cream (if you wanna) and enjoy!
