Manchow soup, it’s an Indo-Chinese soup that is hot and spicy made of vegetables. In this soup, you can choose the vegetables you want in your soup. Here in our recipe, we have incorporate cabbage which gives an excellent crunch to taste bud. We have used carrots to give color and little sweetness to the soup. Nowadays we are talking a lot about proteins so we have added a good quantity of tofu to it. Many people don’t eat mushrooms so if you want to avoid mushrooms you can avoid them. If you see in restaurant hey people serve soup very thick but personally, we don’t prefer the soup should be so thick, so we have taken corn flour very little, it will not make you soup so thick but will give a smooth texture to your soup, but in case you want thick soup you can add little more corn flour to the soup. We always prefer to use fresh vegetable stock, because it gives your soup a very delicious flavor, but in case you are in hurry and you don’t have vegetable stock in hand you can use stock cubes also. - 1 tbsp. vegetable oil
- 1 tsp fresh chilies (crushed)
- 4 tbsp. garlic (chopped)
- 1 tbsp. coriander stems (chopped)
- 1.5 liters vegetable stock (fresh)
- 1/4 cup finely chopped cabbage
- 1/4 cup finely chopped french beans
- 1/4 cup finely chopped carrots
- 1/4 cup finely chopped bell pepper
- 1/4 cup finely chopped mushrooms
- 1/4 cup finely chopped tofu
- 1 tbsp. light soya sauce
- 1/2 tbsp. dark soya sauce
- 1 tsp. vinegar
- 1 tsp. black pepper
- 1/2 tsp. sugar
- 1 tbs water and 1 tbsp cornstarch (mixed)
- 1 cup parboiled noodles
- 1/4 cup corn flour
- 1 cup oil for frying
- 1/2 tsp spring onions (for garnishing)
- Take oil in a medium-size pot add garlic, ginger, chilies, and coriander stem, sauté them for few seconds. Now add strained vegetable stock and cook it for few minutes.
- Now add all the chopped vegetables to it and cook it for another 2-3 minutes. It’s time to add our soya sauce, light, and dark, salt and black pepper. add water and corn flour mix to the soup. Now let it cook for another few minutes. In the end, put sugar and vinegar just let the soup boil for 1-2 minutes.
- Meanwhile, put oil in the frying pan and keep it on medium flame to get hot. Till the oil get hot, take parboiled noodles, sprinkle corn flour, and mix them with your hands. Make sure that the noodles get coated nicely.
- Put the noodles in medium hot oil for frying, Fry it gets golden brown.
- Let’s try the delicious man chow soup, sprinkle some spring onions and fried noodles. Enjoy this soup in cold chilly weather!
