(or afternoon or night) We are heading off to a hike in 30 minutes but we really wanted to write this post first since the walk is long! Meet our quick beetroot rice recipe. To all the beetroot haters, before you close this recipe, hear us out. This recipe will actually taste GOOD. Even if you absolutely dread beetroot (or rice!)

  • 1 1/2 cup boiled basmati rice
  • 1/2 cup grated beetroot*
  • 1 tsp. ginger and green chili paste**
  • 1/4 tsp. garam masala
  • 1 tsp. salt
  • 1 tsp. vinegar
  • 1/4 tsp. granulated sugar
  • 1/2 tsp. lemon juice
  • Corriander leaves (for garnishing)
  • 2 tsp. vegetable oil
  1. Take out a frying pan and put it on your stove. Turn up the heat to medium flame and pour your vegetable oil on it and let it get slightly hot.
  2. Now add your green chili and ginger paste in the frying pan and saute it for a few seconds.
  3. Now add your grated beetroot and saute it until it gets soft.
  4. Now add your spices (salt and garam masala) and add your boiled basmati rice in the frying pan. Saute for 2 minutes with a gentle hand.
  5. Now we will add vinegar, lemon juice, and sugar on your rice and saute it for another 2 minutes.
  6. Now your rice is ready! Sprinkle some coriander leaves on top and enjoy!
