Dips: Hummus Sour Cream Lemon Chilli Dip Pesto Sauce Classic Hummus What you need: 1 cup boiled chickpeas 1 tbsp yoghurt (optional) 3-4 garlic cloves 1/2 cup. tahini 1 tbsp. extra virgin olive oil salt according to taste 1 tsp lemon juice Method: 1 ) Soak the chickpeas in room temp. water at least for 6-8 hours. After that boil it. 2)Take out these chickpeas in a strainer so all the water drains out and then let it cool down. 3) In an empty blender put the tahini ,lemon juice, garlic cloves and salt. 4) Blend until it becomes a very fine paste. If the paste stays thick you can add yoghurt. 5) Now add the chickpeas in the blender along along with the paste and drizzle in some olive oil. Blend the mixture until it becomes a fine paste. 6) If your paste stays thick you can add some icy cold water. This always does the trick. 7) Taste and adjust the hummus according to your palette and for some extra zing you can add some lemon juice. 8) Scrape the hummus into a serving bowl and garnish it with some fresh parsley and olive oil. You can also add some fresh olives if you want. Notes: Yoghurt is optional You can use canned chickpeas but you will get a better result with fresh ones. Sour Cream Ingredients: 1 cup hung curd 1/2 cup chilled whipping cream 1 tsp salt 1/2 tsp sugar 1 tsp lemon juice 1/2 tsp oregano Method: Mix the hung curd and whipping cream together along with sugar, salt and lemon juice in a bowl. Whip it for 2-4 minutes Transfer this to a serving bowl and garnish with oregano. Pesto Sauce Ingredients: 2 cup fresh basil leaves 1/2 cup olive oil 1/4 cup pine nuts 1/2 cup fresh parmesan cheese Salt according to you 2 garlic cloves Method: Place pine nuts in a small skillet on medium low heat. When they start getting brown turn off the heat and let it cool. Put the basil,pine nuts, garlic and parmesan in the blender and blend until it becomes a paste. Now add salt and while the machine is running pour the olive oil in the blender. Enjoy! Mix it all together in the blender until becomes a fine paste and then serve and enjoy!
