I didn’t even have a sip of my tea when I remembered I had to go for yoga and I have to admit it couldn’t come at a more perfect time. Meditation and cooking was exactly what I needed after a busy morning. After I was back we went on with the usual routine of me asking my family what they want to eat and them replying with “anything.” So I decided to whip up a simple, healthy and delicious salad. 3 – Step Barley and Pesto Salad

Meditation and cooking was exactly what I needed after a busy morning. After I was back we went on with the usual routine of me asking my family what they want to eat and them replying with “anything.” So I decided to whip up a simple, healthy and delicious salad. I hope you enjoy this recipe as much as I do!
- 1 cup boiled barley
- 1 1/2 tbsp. pesto sauce (you can try to our recipe)
- 1/2 cup lettuce
- 1/3 cup finely chopped lettuce
- 1/3 cup bell peppers
- 1/3 cup diced onions
- 1/3 cup sun dried tomatoes
- 1 tbsp roasted pine nuts
- 1/2 tbsp olive oil
- 1/2 tbsp lemon juice
- 1/4 tsp black pepper (crushed or powdered)
- 1 tsp salt
Mix the barley and pesto sauce together and keep aside for two hours.
- Till the barley is marinated we can prepare the other things. (Start chopping all the ingredients as the ingredients list states.)
- Now mix everything including the barley mixture. Now grab a big bowl and create a layer of lettuce in the bottom. Place the prepared salad on top of it.
- *If you want you can garnish with pine nuts
