Nutritious Thai Lettuce Wrap

These healthy Thai lettuce wraps are loaded with flavor and lots of veggies, these easy healthy lettuce wraps are made with tofu and are a great dinner recipe. They’re filling yet light, totally healthy, and slightly sweet yet nutty and spicy. They also have the aroma of Thai basil leaves, which creates a fun flavor and effect!

Ingredients


2 to 3 lettuce leaves
1 eye bird chili, finely chopped
1/4 cup carrot, finely chopped
1/4 cup french beans, finely chopped
1/4 cup baby corn, finely chopped
1/2 cup pan fry firm tofu, finely chopped
1 tsp light soya sauce
1 tsp mushroom sauce
1 tsp grounded peanuts
1/2 tsp chili flakes
1/2 tsp brown sugar
2  tsp cooking oil
few drops of lemon juice
few twigs of  Thai basil leaves
iced water to dip lettuce leaves

Method

  1. First, take out two to three leaves of lettuce and dip them in iced water, to maintain their crunch.
  2. Take a medium size pan, and put it on medium flame. Add cooking oil to it. Once it gets a little warm add chopped chili and stirs it with a spoon. Add chopped carrot, beans, and baby corn, cook for two to three minutes, and stir them slowly.
  3. Now add salt, soya sauce, mushroom sauce, and brown sugar to the stir fry vegetables and mix them with a spoon. Add pan-fry tofu, grounded peanuts, and finely chopped Thai basil to it, and cook for a few minutes. Just add a few drops of lemon juice from the top and close the flame. 4. Take out lettuce leaves from the iced water and put on a muslin cloth or kitchen towel to absorb excess moisture. Assemble lettuce wraps by spooning 3 to 4 tablespoons of the vegetable mixture into the center of lettuce leaves or cups. Garnish with grounded peanuts and chili flakes if desired, and serve immediately with sweet and sour Thai sauce or spicy siracha sauce.
